Roasted New Potatoes with Rosemary


    • 2 pounds new potatoes, cut into small pieces
    • 3 cloves garlic
    • 1/8 cup olive oil
    • 2 tablespoons chopped rosemary
    • 3/4 teaspoon kosher salt
    • 1/2 teaspoon ground black pepper


    1. Heat oven to 400 degrees.

    2. Cut about 2 pounds of unpeeled new potatoes into walnut size pieces.

    3. Place in bowl with 1/8 cup of olive oil, 3/4 tsp. of kosher salt, 1/2 tsp. pepper, 3 cloves of garlic minced, and 2 Tablespoons of chopped fresh rosemary.

    4. Stir until well-coated.

    5. Spread out in one layer on flat pan until brown, stirring once.  Cook for about 30-45 minutes, until potatoes are done.
