Roasted New Potatoes with Rosemary
- 2 pounds new potatoes, cut into small pieces
- 3 cloves garlic
- 1/8 cup olive oil
- 2 tablespoons chopped rosemary
- 3/4 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
Heat oven to 400 degrees.
Cut about 2 pounds of unpeeled new potatoes into walnut size pieces.
Place in bowl with 1/8 cup of olive oil, 3/4 tsp. of kosher salt, 1/2 tsp. pepper, 3 cloves of garlic minced, and 2 Tablespoons of chopped fresh rosemary.
Stir until well-coated.
Spread out in one layer on flat pan until brown, stirring once. Cook for about 30-45 minutes, until potatoes are done.
