Easy Roasted Tomato Sauce

Ingredients:

10 pounds Roma tomatoes
1 Bell Pepper (chopped)
1 lb. Onions (chopped)
3-5 garlic cloves (minced)
2 tsp. fresh oregano (chopped)
2 tsp. fresh basil (chopped)
Salt & Pepper (to taste)
Olive Oil
    If you'd like to use this as a base for other things other than sauce (soups, etc), you can remove all items except tomatoes, garlic, salt & pepper and follow directions below.

    Directions

    1. Preheat oven to 325 degrees. Wash and quarter tomatoes (leaving skin on).  Place tomatoes, peppers, onions and garlic in a Pyrex glass baking dish.  Drizzle the top with olive oil and sprinkle basil, oregano, salt & pepper on the top.

    2. Cook for 4-6 hours in the oven.  You will know it is done when the tips of the tomatoes on the top of the dish get brown/black

    3. Ladle mixture into an immersion blender (recommended) or a regular blender.  You may need to do this in stages based on the size of your blender.  Pour mixture into a bowl (if serving immediately) or storage container.  Can be stored in refrigerator for up to 7 days.  If freezing, we recommend placing the mixture in freezer safe gallon size Ziploc bags and laying them flat in the freezer.
